Yam is characterized by long, white roots. They are known as a vegetable and are becoming increasingly popular as dried food. The neutral-tasting root flesh is said to be able to store a particularly large amount of light. The absorption of light energy through food is highly valued in Indian/Asian and anthroposophical nutritional teachings.
The Dioscorea batatas / polystachya variety, also known as light root, is cultivated for Sanatur yam root. It is one of the few varieties that does not contain hydrocyanic acid and can therefore also be eaten raw. Sanatur light root thrives in the mild climate of the Lake Constance region on a biodynamic organic farm.
