Sanatur yams are grown on a biodynamic farm on Lake Constance and are authorized to bear the protected designation “Lichtwurzel.”
In anthroposophy, the white root flesh of male plants is believed to effectively absorb the energy of the “light ether” (lichtwurzel.de). Furthermore, it is one of the few varieties of this popular root vegetable that does not contain hydrocyanic acid and can therefore be offered as a raw food. Other varieties must be cooked due to their hydrocyanic acid content.
